Our balsamic vinegars come from the Terra del Tuono vinegar house in Reggio Emilia, Italy. Here you will find the three kinds that are often confused: traditional balsamic vinegar DOP, balsamic vinegar of Modena PGI, and condiments — sweet-and-sour dressings made from grape must and wine vinegar.
Which one for what
- Tradizionale DOP "Red Lobster" — aged at least 12 years in wooden barrels. Thick and intense; a few drops over cheese, risotto or strawberries.
- Invecchiato – aged 10 years — dense and rounded, for salads, cheeses and warm dishes.

What is the difference between DOP, PGI and a condiment?
Tradizionale DOP is made only from cooked grape must and aged for at least 12 years. Balsamic vinegar of Modena PGI is a blend of grape must and wine vinegar. Condiments are sweet-and-sour dressings from must and vinegar that do not carry these protected names.
Do they contain allergens?
Yes. Balsamic vinegars and condiments contain sulphites. This is stated in the label information of each product.
